MEET CHEF LAUSER

If anyone can win hearts with food, it’s Chef James A. Lauser. As one of the most noted Chefs in the Brandywine Valley, Chef cooks up award winning food at the Christiana Hilton everyday. Whether it’s a banquet for over 100 guests, or an intimate dinner for two in the Brasserie Grille, Chef Lauser’s culinary creations are a delight.

A graduate of the Culinary Institute of America, Chef Lauser has been passionate about cooking since he was a young man. Growing up in a family of five children, he saw a need to help his two busy parents cooking in their cozy home kitchen. As he grew more comfortable in the craft, his creativity began to flourish. During his Navy years, Chef Lauser took advantage of his travel through  Asia to experiment with new flavors and combinations. Today, Chef’s dishes win awards and recognition for their flavor, originality, and creativity. His menu is designed by developing partnerships and relationships with the local community, charities, farmers and vendors. Meet Chef Lauser during your next visit to the Hilton Estate.

  • 2010-2011- Elected Vice President of the First States Chef Association
  • 2009- Awarded Delaware Chef of the Year by First States Chef Association
  • 2009- Awarded Best of Delaware by Delaware Today, Brasserie Grille Restaurant, Delaware's Best Kept Secret.
  • 2006- Outstanding Manager of the Year, Delaware Hotel & Lodging Association
  • 2007- 1st Place, Delaware Bay Oyster Cook-off sponsored by the Delaware Bay Estuary Council
  • 2006 & 2007- Awarded a place to represent Chef of Delaware at the Great Ameican Seafood Cook-off in New Orleans, Louisana sponsored by the Food Network and Budweiser Beer.
  • 2005- 1st Place, People's Choice Award at the Greater Baltimore Chile Cook-off.
  • 1999- Awarded Culinarian of the year by the First State Chef's Association.
  • 1999- 1st Place, Pasta Competition at the 4th and 5th Annual Chef's Championships, International Hotel Motel Restaurant Show in New York City.
  • Recipient of over 20 American Culinary Federation Competition Medals.
  • 1999- 1st Place, A.C.F Gold Metal, Contemporary Hot Food Competition at American Culinary Federation Northeast Regional Conference.
  • 1999- Winner of the Boursin Cheese Chef of the Year contest for the Philadelphia Metro Area.
  • 1998- Christiana Hilton Coach (Manager) of the Year.
  • 1995- Certified Executive Chef, Re-certified in May 2000 & May 2005.

The Restaurant Issue: 96 Favorites

Why don't more people know about the Brasserie? Tucked into the Christiana Hilton, it's far more than a convenient place for travelers. It's part steakhouse, part seafood house (Chef Jim Lauser prepares some of the best crab cakes around), and all classic. We don't see veal Oscar on enough menus these days.

Chef Lauser and Kara Namoli represented the Estate at the 13th Annual Meals of the Masters Event! Chef Lauser was one of 30 noted chefs from around the WORLD who contributed to this great cause with all proceeds benefiting Meals on Wheels Delaware! His Lobster Dogs were a HIT and announced in the New's Journal as one of the top 3 dishes served!
